Meet Tom: A Chef with Big Dreams. Tom lives in one of our Supported Independent Living (SIL) communities — and he’s proof that with the right support, determination, and opportunity, work can open doors to confidence, connection, and an incredible sense of achievement.
“I love the diversity in cultures — the food, the influence, and the people. It opens up so many doors for future inspiration. I thrive on the pressure and structure of gastronomy,” Tom says.
His culinary journey began humbly — washing dishes in North Sydney back in 2018. Since then, he’s worked in pubs, bakeries, and catering, even cooking for big names like Andy Murray, Shaquille O’Neal, and Paul Rudd. But for Tom, it’s not about celebrity moments — it’s about growth.
“I’ve been incredibly fortunate to learn so much since I started. Having work gives you the best sense of purpose in life. It’s like exercise — it keeps you sharp and motivated.”
More Than a Job
Tom describes work as something that brings structure, learning, and belonging to his life. The kitchen is where he finds focus, creativity, and the satisfaction of mastering new skills every day.
He’s also passionate about using his talents to help others. Outside his professional work, Tom volunteers at Our Big Kitchen in Bondi, a not-for-profit organisation that helps feed people in need.
“I love helping out and giving back. It’s a great feeling knowing you can use your skills to help others.”

Dreaming Big: From Farm to Plate
Tom’s journey doesn’t stop in the kitchen. His dream? To open his own farm-to-plate pub in the Hunter Valley — complete with homegrown produce, livestock, and his own line of wines, beers, and spirits.
“Eventually I want to put all my skills together and open up my own pub. I’ve always been fascinated by the farm-to-plate idea.”
It’s a vision that shows how work can spark ambition and give people a sense of direction — no matter where they start.
